Home Comforts



I've been feeling poorly with winter ills and chills, and there's nothing like a little home baking and a cuppa to make me feel better.

These are blueberry and lemon curd muffins - I love cooking (and eating :P) food almost as much as I love cooking glass!

I just made ordinary blueberry muffins and put a dollop of lemon curd in their middles...divine!

I made the lemon curd the other day in a double boiler as suggested in a recipe, but what a fuss! It took ages and even then I wasn't sure that it had set. Then my sister gave me a microwave recipe which she says is easy-peasy, so I'm going to try that next time. Fresh lemon curd is one of life's luxuries for me!

It's officially the first day of spring tomorrow...bring it on!

Lesley! I am so sorry you have not been well! Oh this is not good news! I hope the tea and muffins make a huge difference. These muffins sound wonderful. I had never had lemon curd at all until we went to England and have never tried to make it myself (but it sounds lovely).

I also have to ask you if that is a Bodum tea pot you have there! I just found it here and have fallen head over heels in love with the design! I will say it is not inexpensive, but it is fabulous!

My dear, I do hope you are feeling better. Try to rest and tomorrow things will be better. My guess is you have been doing just way too much! Hang in there, my friend!

PS we are still brutally hot here.

Comfort food always helps a flu bug, don't you think?
I will post the recipe for Lemon Curd - or Lemon Honey as we used to call it when we were kids. Mum had an amazing lemon tree in her Christchurch garden and we ate lots of yummy lemon based goodies.
Yes, the teapot is a Bodum! There's a funny story that goes with it - we fell in love with it a few years ago when shopping for a wedding gift. We bought one for the couple and on the card wrote that if they had a wish, all they must do was to rub the pot and a genie would appear and grant it. It has become a standing joke with their family and ours.
We bought one a year or so later - we just couldn't resist! It's a lovely pot with a removable mesh basket for leaves. It has a reasonably good "pour" too. But I just love the look of it - and it goes through the dishwasher!
muffarse...hahaha! That's a good one! I think they must be playing with us!
